Paella Recipe
This is a Swiss paella recipe that I cook all the time. paella is one of our family’s favorite dishes. I cook every second or third weekend, and I’m never bored! It is also very suitable for a festive table if one or two couples are invited.

  1. Be sure to prepare all the products before starting cooking. Cut the onion into half rings. Cut the carrots into strips. Pour the rice into a plate. Pour the wine into a glass. Pour water into a saucepan, but do not put it on the gas. We cook in a deep frying pan, like mine, or in a wok, who has it.
  2. Fry seafood or fish for a few minutes in a very hot frying pan in a small amount of oil. After that, wash the pan or wipe it with a napkin.
  3. Pour a little more oil, fry the chicken. Cook over high heat, stirring frequently. Fry for 10-15 minutes, depending on the selected part. At the end, add a clove of garlic and season with salt and pepper. Transfer to a plate. Meanwhile, pour in warm water, add it to the broth cubes.
  4. Still on high heat, in a small amount of oil, fry the onion and carrot, stirring constantly. Be sure to be on high heat, otherwise your vegetables will turn into porridge!! At the end, add the second half of garlic, salt, pepper. Your vegetables should look like in the picture
  5. Then add the rice to the vegetables and fry it for a few minutes, stirring constantly. Then pour in the wine. Fry for another 3 minutes until the wine evaporates, stirring constantly.
  6. Pour the broth over the rice and vegetables and reduce the heat. Add saffron and chicken, mix, add a little salt as needed, pepper, cover with a lid. I love this stove as much as I do, I put it on 3-3.5. Who has gas, then make a small fire. Simmer under the lid for 20 minutes, stirring 1-2 times, very carefully.
  7. Add seafood (fish) and frozen peas. Stir and simmer under the lid for another 5 minutes.
  8. Remove from the heat, add some olives to the dish, mix. Let it stand under the lid for another 10-15 minutes and you can start eating, after sprinkling the dish with lemon juice. Enjoy your meal!
