Pie “Fruit mix” Recipe
This is my favorite fruit pie. Delicate shortbread dough and jelly filling… It’s just amazing!!! It is easy to prepare and is eaten quickly)

Instructions
Install the chopping attachment in the food processor. Put cold butter, margarine and flour sifted with salt.
We punch everything in pulse mode for a few seconds until we get a homogeneous fine crumb.
Add ice water and whisk everything again in pulse mode for a few seconds.
We collect the dough into a ball, wrap it in plastic wrap and put it in the refrigerator for a while while we prepare the filling.
Cut the apple, banana and kiwi into small cubes.
Add sugar, starch and cinnamon to the fruit. Mix it.
Divide the dough into two parts. One part should be no more than 1/3, it is better to take 1/4 – it will be a “cap”.
Divide the egg into yolks and whites. Beat lightly with a fork.
Grease the bottom of the mold with vegetable oil. A large piece of dough is rolled out so that it is larger than the shape itself.
Brush the dough with a thin layer of protein and distribute the filling.
The second, smaller piece of dough is also rolled out, but already according to the size of the mold. Make a cap.
Pinch the edges and brush well with yolk. Bake in a preheated 200°C oven for 30 minutes.
