Strudel “On Family Recipe” Recipe
Strudels, how my grandparents cooked them, and how I cook. A delicious main dish of dough, meat and sauerkraut.

  1. Necessary product.
  2. Wash the meat and dry it with paper napkins. In a large pot (it is desirable that the pot was high – 60 cm in height, later you will see why). So, pour a little vegetable oil into the pan and heat it up, now put the meat in the pan and fry it on all sides until golden brown.
  3. To the fried meat, add medium-sliced onions and carrots (can be semi-rings), cut into strips or grated on a coarse grater, fry everything a little.
  4. Add pickled cabbage to the fried foods and fry a little (min. 5) too,
  5. Now pour in the water so that the products are completely covered with water, bring to a boil, add bay leaf, salt, pepper and, turning down the heat, cook for 30-40 minutes. If the dough has not yet grown up during this time (most likely, it is), you can turn off the fire for now and let everything stand and wait until our dough fills the bowl to the top.
  6. Cover the cup with a lid or a film and put it in a warm place for 1-1.5 hours. I usually put a cup of dough under the blanket in bed – it rises well.
  7. And here the dough is ready. Put the dough out of the mold on the floured work surface of the table
  8. And roll out into a layer about 1 cm thick . Do not roll out too thinly. Grease the layer with melted margarine or butter, roll into a roll and cut into 5 cm pieces.
  9. Leave the strudel on the table.
  10. Bring our cabbage to a boil (if we have turned off the fire) and put the strudel in the pan on top of the cabbage. Now you need to cover the pan with a lid, but keep in mind that during cooking the strudels will greatly increase in size and they will need space, which means a high frying pan is needed. I took today not very high, but I have a cup that just fits this pan in diameter, so I covered the pan with it. The cup, of course, is steel.
  11. We turn down the fire, but not very much – the contents should not stop boiling, otherwise the strudels will “fall off” and be “rubber”. Cook for 40 minutes.
  12. After a while, turn off the heat supply and immediately open the lid (if this is not done, a vacuum will be created and the strudels will fall off).
  13. Dinner is ready! we take out our lush strudel in a cup, and you can call the household to the table. Strudel in the section. Put the strudel on a plate, unwinding or cutting it, and put it next to the cabbage and meat. I have everything like a strudel: when I cook, it turns out a lot. Add salt and pepper to taste.
