Cucumbers just attack! Salads are already fed up… I present to you a recipe for cooking caviar from cucumbers. This is not only a delicious snack, but also a great way to “recycle” cucumbers.
Cucumbers cut into small pieces (you can use overgrown cucumbers, peel them and remove the seeds).
Stew in sunflower oil in this order: cucumbers first.
Cut onion, pepper, garlic into small pieces,
grate carrots on a coarse grater.
Grate the tomatoes on a fine grater.
To cucumbers, when they let the juice and it is half evaporated, add onions, carrots, pepper. Simmer over medium heat (I didn’t cover it) until the vegetables are soft and the liquid almost evaporates.
Then add tomatoes, garlic (you can add a piece of grated ginger, curry powder and mustard seeds – it will turn out in the manner of Indian chutney).
You can salt and pepper at any stage.
All this is stewed over medium heat until the liquid evaporates.
Caviar is delicious as simply spread on bread, and used as a main dish with any white side dish (rice, potatoes, pasta).
