Vegetables wash, clean. Thin strips cut carrots, bell pepper and hot pepper. Onions and zucchini cut into cubes.
In a cauldron or saucepan pour oil, heat, put onions and carrots and fry over medium heat until transparent onions for a couple of minutes, put the Bulgarian and hot pepper. Fry, simmer for three minutes over medium heat.
Eggplant washed with salt, lightly wring, put to the vegetables, put the zucchini there, stir, simmer over medium heat for 5 minutes.
Put chopped tomatoes, garlic, parsley and celery. Stir.
Add ground coriander, tomato sauce or ketchup. Stir. Pour the soy sauce. All mix and simmer for another 20 minutes until cooked over medium heat with the lid closed stirring occasionally.
Ready vegetable stew can be served hot or cold, as an snack, without grinding.
