  2. Heat 100 ml of water, add sour cream, sugar and yeast, mix well. Pour in the yeast slowly so that lumps do not form.
  3. Cover the bowl and put it in a warm place for 15 minutes. As soon as the dough begins to settle, everything is ready.
  4. Sift the flour and salt into a large bowl, make a recess, pour in the yeast and the remaining water, also warm.
  5. Slowly raking the flour from the edges, knead the dough. If you feel that it turns out cool – pour some water. I had water.
  6. Grease the table and hands with oil, lay out the dough and start kneading with your hands. Knead for a long time, 20 minutes. This is the secret of this bread! When the dough starts to peel off from the hands and becomes elastic, like this:
  7. Turn it over, oil it on all sides, put it in a bowl. Cover with a lid and put away in a warm place for at least an hour. The dough should increase in volume three times. That’s what it will be. I was wandering so much that I even tore the lid off the bowl!
  8. Spread the dough on the table, knead, cut into two parts. Such oval blanks are obtained.
  9. Take one blank, put it on a baking sheet (oiled or covered with paper) and knead it with your hands, giving it a round or oval shape. By the way, matnakash is translated from Armenian as stretched fingers. The thickness is about one and a half cm. Keep in mind, my keys are small!
  10. Then we make depressions along the perimeter and lower it. I did it with my fingers, you can use some kind of tool, for example, a roller for rolling out dough.
  11. Cover with a damp towel and let it come up for 10-15 minutes. Then lubricate with water mixed with oil and draw the grooves again.
  12. Put it in a very hot oven. I have a mini oven preheated to 250 degrees, but it’s really too much for her! He’s hot as Martin! You need to put 300-320 degrees in a large oven, I think. Bake the bread for 10 minutes. Here’s how it should work out.
