Mix egg, olive oil, sugar and lemon zest.
Sift the flour. Knead a soft elastic dough.
Pack and refrigerate for 1 hour.
Grind the cottage cheese through a sieve. Add sour cream, sugar, vanilla sugar. Mix it. Add 1 egg yolk. Mix it.
Separately, whisk the protein with a pinch of salt into a persistent foam. Add to the curd mass. Mix gently.
Sift 20 g of flour on the table. Roll out the dough into a rectangle of 20×30 cm.
Cut it into 6 10×10 squares.
Grease the baking pans with vegetable oil.
Put the dough pieces into the mold. Distribute the cream into the cells with the dough.
We send it to a preheated 180 degree oven for 30-35 minutes.
The cakes are ready. Let them cool down for a few minutes. Remove from the mold, sprinkle with powdered sugar.
