  1. Remove the chicken’s spine…
  2. … and cut the fork bone, turn the cut down and press down well with your hands so that the chicken “flattened”. RUB the chicken with salt and pepper and put it in the refrigerator for 1.5 hours.
  3. Mash the garlic with a press, crumble the Bay leaf, add salt 1 tsp. and spices, RUB with your hands. RUB the chicken with this mixture, massaging it assiduously. Place in a container and fill with water, in which to dissolve the salt 3 tsp. and add lemon. Put it in the refrigerator for 24 hours. (after 12 hours, turn the chicken over to the other side).   4. Peel the chicken from the pieces of garlic and Bay leaf. Dry. Place on a grid. Mix the honey with the vinegar and grease the whole chicken. Let the glaze soak in and smear again.
  5. Sprinkle with paprika and use a brush to cover the chicken nicely.
  6. I cooked with new potatoes, which I salted and smeared with olive oil. Spread it on a baking sheet, and set the grill with the chicken on top.
  7. Bake in a preheated 190″C oven until ready. The time depends on the weight of the chicken. It took me 1.5 hours. Focus on your oven!
