An exquisite dessert. It’s easy to cook it, but it’s impossible not to fall in love with it from the first spoonful! Parfait (fr. parfait – flawless, beautiful) is one of the most famous French desserts. It is based on whipped cream.
Rub the yolks with 1 tablespoon of sugar, put them in a water bath. While stirring, enter the coffee. Steam the mixture until it thickens.
Beat the cream on medium speed until stable peaks.
Carefully pour the cream into the yolk-coffee mixture. Mix from bottom to top. Achieve uniformity of the parfait, but in no case do not let the cream settle. Lay out a portion and put it in the freezer for complete solidification.
Cooking apples in caramel.
Peel a large apple, remove the core and cut it into washers, divide them in half.
Melt the butter in a frying pan, heat the apples over medium heat, put 1 tablespoon of sugar and cinnamon, stirring gently, wait for the apple juice, butter and sugar to turn into caramel.
It tightly wraps around each slice of apple.
Place the apples on parchment to dry.
We will need orange syrup with spices.
It is difficult to buy it from us.
So I did it myself.
It’s simple – boil the zest of 1 orange with sugar, cinnamon, cardamom, cloves and nutmeg in 3/4 cup of water for about half an hour (sugar 3 tbsp.l., spices put 1/3 tsp.l.).
We cool the syrup and cook a lot of goodies with it!
Pour the frozen parfait with orange syrup…
… and decorate with apples.
The most difficult thing in this recipe is to wait for the parfait to completely solidify.
