Heat the oven to 200°C. Cover the baking sheet with parchment. Arrange the washed eggplants. Make a few small punctures. And send in the oven until ready, it takes me 10-15 minutes. Focus on your oven.
In a deep bowl, mix the minced meat, egg, onion, chopped herbs and garlic in a blender. Add paprika and pepper. Add salt to taste and mix well.
Remove the skin from the finished eggplant. And mash it into a puree.
Add sour cream and salt to taste. Stir.
Make small meatballs with minced meat. Pour 2 tablespoons of vegetable oil into a preheated frying pan. And fry the meatballs on each side until a crust forms.
Put the eggplant puree in the baking dish and lay out the meatballs.
Prepare the sauce. Pour 1 tablespoon of vegetable oil into a hot ladle or small saucepan. Add large diced tomatoes. Pour in the water and mix. Add tomato paste and chopped hot pepper. Simmer for 3-5 minutes over medium heat.
Pour the sauce over the meatballs.
Sprinkle with grated cheese on top.
Place in a preheated 180 °C oven for 15-20 minutes. Focus on your oven. When serving, you can sprinkle with fresh herbs.
