It is better to serve galetta hot, but also cold, it turns out delicious and very fragrant! And if you cook the dough and filling in the evening, then the cooking time is halved!

  1. Rub the flour and cold butter into crumbs. Salt.
  2. Pour in ice water (4-5 tablespoons) and quickly roll the dough into a ball. Put it in the refrigerator for 20-30 minutes. You can safely leave for the night!
  3. For filling: Peel an onion (one large or two medium-sized ones) and cut into half rings, bacon into strips, and wash the mushrooms and cut into small slices. First fry the onion, add just a pinch or two of sugar – for caramelization. Then add the bacon so it’s just fried, and the mushrooms! Leave to fry for 5-7 minutes. At the end, add the cream, mix well, season with salt and pepper and remove from the stove. Let the filling cool down a little.
  4. Divide the dough into 3 equal parts. On a floured work surface, roll out each piece of dough to a thickness of 0.5 cm, and then carefully transfer to a baking sheet covered with baking paper.
  5. In the center of each biscuit, put the filling of bacon and mushrooms.
  6. Form biscuits and grease the edges of the dough with egg yolk. Bake in a preheated oven at 180°C for 10 minutes.
  7. Then remove the biscuits from the oven, beat an egg into each, add salt and pepper to taste. And again we send it to the oven for 12-15 minutes!
  8. Prepare the galette and immediately serve it to the table with a cup of coffee or tea!
