Yes, another liver pie. But not ordinary, but with a secret. Rather, with a twist, which is the addition of buckwheat flour. This makes the cakes so tender, delicious, fragrant… My husband, a big fan of liver cakes, when he tried them for the first time, was delighted and said that he had never eaten a tastier liver cake! Since only such and especially for him!

  1. If you, like me, do not have buckwheat flour, just grind buckwheat in a coffee grinder or blender. A prerequisite for the preparation of this recipe is buckwheat flour. With ordinary flour, such cakes turn out to be more dense, not so airy.
  2. The liver must be cleaned of films and veins. You can pre-soak it in milk, if the liver is good, I don’t do it. Chop the liver by rolling 2-3 times through a meat grinder. Add eggs, milk, buckwheat flour, salt, pepper, add 5 tablespoons of oil and let stand for 30 minutes. Do not rush to fry, the mixture should be infused.
  3. While the liver mixture is infused, prepare the filling. To do this, fry carrots and onions in vegetable oil, season with salt and pepper. Grind separately (on a coarse grater) egg whites. Put the yolks aside, they will still be useful.
  4. When the liver mixture is infused, fry thin pancakes. I fry in a Teflon pancake pan without adding oil, as the dough already contains oil and they are perfectly fried. Also, I only fry one side over low heat. Since the pancakes are thin, they have time to fry, but to turn them without damaging, it is quite difficult. A total of 10-12 pancakes – cakes. When all the pancakes are ready, start assembling the cake. On the first pancake, apply a thin stream of mayonnaise mesh.
  5. Put the carrot filling on top.
  6. Next – the next pancake, mayonnaise, a layer of grated protein. Protein filling should be less than carrot filling. So, alternating fillings, fold the whole cake.
  7. The last cake without filling, it must be lubricated with an even layer of mayonnaise, and sprinkle with egg yolk grated on a fine grater on top.
  8. Now proceed to the design. I prefer to decorate with the same products that are included in the composition. That’s why I decorate it with carrots. Boiled and peeled carrots are finely chopped, and then we collect rosehip with plates.
  9. Make as many roses as you have the patience and prepared carrots.
  10. It remains to put the pie in the cold for 2-3 hours for impregnation. The cake is cut.
