  1. To prepare the broth, you need to take the drumstick of a turkey (chicken). Rinse in cold water, changing it two or three times. Put the turkey shanks in a deep frying pan of small diameter and fill them with cold water. Bring the contents to a boil, and then carefully remove all the foam from the surface. Put the onion, add salt and continue to cook on low heat for about an hour, until tender.
  2. Put the pan on the stove at a high temperature. Pour in 2 tablespoons of olive oil. Then add diced carrots.
  3. Then add diced celery and finely chopped garlic. Mix everything, reduce the heat, cover and cook for 15-20 minutes, until the carrots are soft.
  4. Then add the frozen and canned peas.
  5. Pour in 800 grams of broth and leave to simmer for 15-20 minutes.
  6. Separate the mint leaves from the stalks and add to the soup. Next, all the ingredients are crushed into puree using an immersion blender, pepper is added and brought to a boil. If the soup is thick, you can add a little more broth.
