Today I will offer you a very tasty, rich, fragrant, warm homemade potato soup with pork. A minimum of ingredients, and such an excellent result, because the soup comes from childhood. Only I changed it a little and put a small bell pepper. If you do not deviate from the recipe, you will get just excellent results. Today, sharp crackers from Borodino bread are ideal for this soup.

  1. Put the meat and broth to cook. I took half the pork, half the flesh and ribs. Pour water into a saucepan, put the meat, bring to a boil and remove the foam. Roll the whole onion in the husk. Cook the meat for about 30 minutes. Add salt to the broth to taste. From the onion in the husk, the broth will acquire a golden color. Prepare the vegetables for the soup and butter. It is not recommended to replace butter with any other. It will taste completely different!
  2. We will need a saucepan with a thick bottom, in which we will first stew vegetables in butter, and then cook soup. If there is no such thing, then you just need to take a frying pan or a saucepan and stew vegetables there. Melt the butter and put the finely chopped onion. Gilding on it. Add the carrots, reduce the heat, cover and simmer the vegetables for 5 minutes. Put the bell pepper, also cut into small cubes. Simmer for another 5 minutes.
  3. Cut the potatoes into small cubes and put it with the vegetables. We languish for 15 minutes so that all the vegetables are soaked in oil and “make friends”. The vegetables will be almost ready. Pour 1.5 liters of strained broth. Bring to a boil, reduce the heat and cook until the potatoes are ready. It’s fast. At the very end, put pepper, bay leaf and try to add salt. If it seemed to you that it was unsalted, we add salt. Cook for another 3-5 minutes and remove from heat.
