  1. Pre-prepare the Turkey: season the Turkey with salt, herbs of Provence, wrap in foil and bake in the oven at 200 degrees for two hours.
  2. Cool, drain, and cut the Turkey into small pieces.
  3. Peel the onions and carrots. Thinly slice the onion.
  4. Cut the carrots into cubes.
  5. In the bowl of a food processor, put the flour, butter, ice water, and prepare the chopped dough.
  6. Gather the dough into a ball and put it in the freezer for 20 minutes.
  7. Split form (I have a diameter of 26 cm) cover with baking paper, and lay out the dough, making high sides.
  8. Lay out the Turkey, onion and carrot.
  9. Beat the eggs, milk and sour cream.
  10. Pour the resulting mixture into the pie. Bake the pie in a preheated 180 degree oven for 40 minutes.
  11. Grate the cheese on a large grater.
  12. Take out the pie, sprinkle with cheese and bake for another 20 minutes.
  13. Serve warm!
