Rice Pudding with dried Apricots Recipe
Bright, sweet and energized pudding. Perfect for breakfast or afternoon tea. Any fruit can be used as fillers. I’m with dried apricots and peaches.

  1. Mix rice, milk and nutmeg in a large bowl. Cover with a film, pierce in 2-3 places and cook in the microwave at maximum power (I have 700) for 5-6 minutes.at the end: remove the film, stir and leave for 1 minute to cool. Cover with clingfilm again and cook for another 5-6 minutes. rice can fall apart already at this stage, and milk will almost be absorbed if the power of your microwave is 900 watts.
  2. The rice should look like in the photo. If necessary, bring the rice to readiness. To do this, remove the film, carefully – the steam may burn. Stir, cover with clingfilm and put in the microwave for 2-3 minutes. Leave on for 2-3 minutes.
  3. In a separate bowl, mix the coarsely chopped dried apricots, honey and the juice of one tangerine. I always pre-steam dried apricots with boiling water. Preheat in the microwave at maximum power for 1 minute.
  4. Rice is mixed with cottage cheese, previously rubbed through a sieve. Add the mixture with dried apricots and chopped peaches, mix.
  5. Spread on the cream, sprinkle with zest and chopped almonds. If desired, sprinkle with honey and serve.
