For a roast, it is better to use meat with a bone, I took the ribs.
Chop the ribs into pieces
Prepare the marinade by mixing all the specified products for the marinade

For cooking a roast, it is better to use a thick-walled dish with a lid. I used a cast-iron saucepan with a lid. A duck house or a cauldron is perfect.
Put the ribs with the onion and marinade in a saucepan, pour in water, cover with a lid and put in a heated to 160-180°With the oven. Cook for about 1.5-2 hours. Periodically look in, make sure that the liquid does not boil out, if necessary, pour boiling water
Wash the new potatoes thoroughly with a brush
Remove the lid from the saucepan, put the potatoes on top of the ribs and cook with the lid open for about 30-40 minutes, until the potatoes are soft and browned
