Spicy Tangerine Marshmallow Recipe

  1. Peel the apples, put 1 apple in the microwave for 2 minutes. Peel the tangerine from the films. Apples and tangerine crushed in a blender, 230 gr. Applesauce, 20 gr. tangerine puree should turn out.
  2. Soak agar-agar in water. Put the agar on the stove, bring to a boil, add sugar and glucose syrup. In a mixer, mix apple, tangerine puree, protein and whisk until white and fluffy. When the sugar has dissolved, cook for about 5 minutes until thin threads form. Set aside the syrup for 1-2 minutes.
  3. Continuing to beat, gradually pour the syrup into the puree. Then add the spices and lemon zest. Beat until a thick, stretchable mass is obtained.
  4. Transfer the marshmallows to a pastry bag with a large nozzle. Transfer to parchment or silicone mat. Leave to stabilize for at least 8-10 hours. Sprinkle with powdered sugar and enjoy your tea!!!
