  1. Nut cookies: Peel walnuts.
  2. Chop into small pieces in a convenient way.
  3. Mix flour, chopped nuts, a pinch of salt and baking powder for the dough in a bowl. Mix it.
  4. Separate the whites from the yolks in different dishes. Add 50 g of sugar to the proteins and whisk.
  5. The protein mass should maintain a good shape.
  6. Add the remaining sugar and honey to the yolks. And whisk until the mass becomes light and homogeneous.
  7. Pour the nut-flour mixture into the yolk and add a little whipped whites. Mix gently.
  8. Then, after 3-4 hours, gently whisk the remaining egg whites several times.
  9. We spread the dough into a mold (20 cm in diameter, having previously covered the bottom with parchment and lightly greased the sides with vegetable oil) and put it to bake in a preheated 180 degree oven for 50-55 minutes, check the readiness with a wooden skewer.
  10. Remove the finished biscuit from the oven and let it cool and infuse.
  11. Cut the cooled biscuit into 3 parts.
  12. Cottage cheese cream: Mix cottage cheese, sour cream, sugar and vanilla sugar in a bowl.
  13. Whisk thoroughly until smooth.
  14. Glaze: mix sugar and cocoa, mix.
  15. Add the pieces of butter and sour cream.
  16. Put on a small fire and, stirring constantly, bring the glaze to a homogeneous, smooth state. Remove from heat and let cool.
  17. We collect the cake: nut cake, put the strawberries cut in half on top.
  18. On top – cottage cheese cream.
  19. Then a nut pie, strawberries again.
  20. Lay out a layer of cream cheese (leave 2-3 tablespoons of cream for the sides of the cake).
  21. On top is a walnut sponge cake.
