I want to offer a tender, fragrant, juicy pie. It is prepared with canned apricots (can be replaced with peaches) and fruit pudding. To make a fruit pudding, use apricot syrup and apple juice.

  1. Cover the 26-28 cm split mold with baking paper, grease the bottom and sides with butter.
  2. Put all the ingredients for the dough into the bowl of the mixer. Beat with a mixer with a hook attachment.
  3. Add a little flour to the dough, collect it into a ball. The dough turns out soft. To go to the form. Dust your hands with flour, smooth out the dough. With your index finger, sprinkled with flour, press the dough along the edge of the mold so that it rises slightly in the air.
  4. Dip your fingers in flour and form a board of dough. Align the bottom. Cover the dough form with a film and refrigerate for 60 minutes.
  5. Prepare the apricot filling. Pour the syrup from the apricots into the pump. The syrup will be useful to us for making fruit pudding. The liquid should be 500 ml. I added 200 ml of apple juice, sugar and pudding to the syrup. Mix well so that the pudding and sugar dissolve.
  6. Cook the pudding, stirring constantly, until thickened. Remove from heat and cool. Stirring occasionally to avoid the formation of a crust.
  7. Spread the apricots on the dough. Pour pudding on top (pour it on a spatula). Align it. Bake the pie in a preheated 180C oven for 30-40 minutes. (watch your oven.)
  8. While the pie is baking, prepare the filling. Separate the whites from the yolks, do this carefully so that the yolks do not get into the protein. Add salt to the egg whites, beat into a strong foam.
  9. Beat the yolks with sugar into a strong foam, add sour cream, beat.
  10. Add the egg whites to the yolks, mix with a whisk from the bottom up. Pour the baked cake and continue baking at the same temperature for another 30-40 minutes. (watch your oven.) If the top starts to burn, cover the pie with foil.
  11. Cool the cake in the form on the grill (take your time, let it cool down well) so that the filling grabs, otherwise it will flow. If the apartment is very hot, put the cooled cake in the refrigerator for 1-2 hours.
  12. Take the pie out of the mold, it needs to be passed along the sides with a plastic knife.
