A spectacular and original snack that looks beautiful and bright on the table. All the ingredients are perfectly combined and quite budget-friendly: pancakes-beetroot-herring. Everything is prepared very simply, even a novice hostess can cope.
As a dye, we will use activated carbon tablets, and in order for the dough to be really black, we will use a fermented milk product.
Crumble the charcoal tablets and dissolve them in kefir. In order for the pancakes to be black, not gray, you need to dissolve the tablets in liquid. If you add them, for example, to flour when kneading dough, the pancakes will be gray.
Add salt, sugar and beat the egg.
Add flour and mix well until smooth.
Pour 1 tablespoon of oil into the dough.
Heat the remaining oil in a frying pan, spread the dough with a spoon and fry the pancakes on both sides.
Boil potatoes, carrots and beets until tender and peel. Cut the potatoes into small cubes.
Cut the carrots into small cubes.
Cut the beetroot into small cubes.
Fresh cucumber, like all other vegetables, cut into small cubes.
We do the same manipulation with a pickled cucumber.
Mix everything together. Drain the excess liquid from the peas and add to the rest of the vegetables. I use high-quality canned peas. The preservation of this brand has high taste qualities and does not contain harmful additives.
Season the vinaigrette with mayonnaise. In the classic version, the dressing is oil, but we will replace it with mayonnaise, because this will allow you to fasten the vegetables so that they are more homogeneous and retain their shape.
Put a spoonful of vinaigrette on each pancake. Then put a piece of herring on top and serve immediately.
