In a saucepan, whisk eggs (2 pcs.), add 60 gr. melted butter (cool to room temperature), liquid honey (3 tablespoons) and sugar (200 gr.). Whisk the mixture. Then put the mixture on a slow fire and stir until the sugar is completely dissolved. Then add soda (1 teaspoon). When heated, the mass should increase by about 2 times. Mix the mass well, then remove the saucepan from the heat, cool slightly and gradually pour in the whole portion of flour (500 gr.). Knead the dough well. If, in your opinion, the dough turns out to be runny, you can add about 1 tablespoon of flour. but! too much flour should not be added, the dough will turn out soft, plastic and easy to work with.
Divide the dough into 8 parts. Roll out each piece of dough on a silicone baking mat or on a sheet of baking paper. To speed up the baking process, roll out the dough on 2 sheets of parchment or silicone mats, i.e. take the finished cake out of the oven and immediately send the next cake into the oven, etc. roll out the cakes 2-3 mm thick. (approximately). The uneven edge of the baked cakes is cut off, the trimmings are crushed with a chopper.
Bake the cakes in a preheated oven to t180-190. Cakes are baked very quickly, so in any case you need to look through the viewing window in the oven.
