Casserole “Mushroom Basket” Recipe
The combination of mushrooms and potatoes – the taste is clear in everything. I propose to cook a delicious and satisfying casserole on bread from improvised products. Suitable for dinner, for lunch with hot broth or soup, decide for yourself. The recipe was born spontaneously during the preparation of mashed potatoes. The rest of the products were in stock and that’s what happened.

  1. Wash, peel and finely chop the vegetables. Potatoes, as usual for making mashed potatoes. Cut the onion into medium cubes. Mushrooms, if they are large, cut in half and put on a plate. Fry the onion, add the mushrooms. Lightly fry. Add the green onion, pre-chopped, and garlic powder. Simmer for a couple of minutes, remove from heat. Boil the potatoes, drain the water and dry for a minute on low heat. Mash into a puree.
  2. Combine with mushrooms.
  3. Grate the carrots with straws.
  4. Combine sour cream, salt, ground black pepper and eggs.
  5. Mix with a mixer or whisk. Add pepper flakes. If the pepper is fresh, cut it into small cubes.
  6. Combine the egg mixture with potatoes and mushrooms, mix well, season with salt and pepper.
  7. Grease the baking dish with oil. The size in which I baked, 27 by 9 cm, depth 7 cm. If desired, cover with parchment. The shape can be round or oval. But then the bread will have to be cut into shape in advance.
  8. Bread can be taken toasted or sliced.
  9. Beat 2 eggs with milk, add a little salt.
  10. Dip slices of bread into this mixture and put them in a mold. First the bottom, then the sides. If the crust of the bread is not rough, it can not be cut.
  11. Pour the third part of the potato-mushroom mixture on the bread, put the carrots on top. Lightly crush.
  12. And pour in the rest of the mixture. Cut the bread that has become soggy from impregnation with kitchen scissors, leaving the edges slightly raised, mix. Put the trimmings on top.
  13. We send it to the oven, preheated to 220 °. At this temperature, bake for 15 minutes. Remove and spread over the entire surface of the cheese slices. Put it back in the oven. Reduce the temperature to 180o and bake until golden brown on the cheese.
  14. Cool the casserole slightly. Take it out of the mold. Cut into slices and serve with sour cream or your favorite sauce.
