Eastern Caviar from Baked Eggplant Recipe
I’ve always loved eggplant caviar, it’s right from childhood). When eggplant season comes, the first thing I cook is eggplant caviar. I know several recipes for this overseas snack). Today I propose to cook “Oriental Aviar”. Perhaps you may ask – why “oriental caviar”? Because it was in the East that eggplants were first baked, and then finely mixed with lemon juice and sesame paste. According to the same recipe, caviar is prepared with fresh vegetables, without excess butter, which is perfectly combined with a piece of white fragrant bread. It seems to me that this is the perfect snack and a great snack!

  1. Prick eggplants with a fork in several places. Cover the baking sheet with foil. Put the eggplants on it. Place the baking sheet in a preheated 180 degree oven for 55 minutes. Eggplants should become very soft.
  2. Cool the eggplants, then peel them. With a knife, cut the pulp into small cubes.
  3. Cover the sieve with a paper towel. Put the sliced eggplants on it so that the excess moisture runs off.
  4. Peel the onion. Finely chop.
  5. Cut Bulgarian pepper into cubes.
  6. Wash the tomatoes, dry them with a paper towel. Finely chop together with the pulp and seeds.
  7. Pass the garlic through the press.
  8. Wash the cilantro, dry it and finely chop it.
  9. Put onions, tomatoes, bell peppers, garlic in a salad bowl.
  10. Put the eggplant and finely chopped cilantro in the same place.
  11. Add salt, freshly ground black pepper. Sprinkle with lemon juice. Season with olive oil.
  12. Then add the Narsharab pomegranate sauce. Mix well.
  13. Before serving, garnish the caviar with pine nuts fried in a dry pan.

They are so delicious that after trying them at least once, stop buying crackers in the store) They go well with any vegetable snack, with any sauce, and for our beloved men they will be a good addition to beer). Cut the crust from a loaf of white wheat bread. Cut the crumb into cubes.
  15. Dip each bar in vegetable oil so that the oil completely covers the bread. Place them on a baking tray. Season with coarse salt. We send it to a preheated 180 degree oven.
