Latvian Apple Pancakes Recipe
Abolu pankukas is an apple pancake, a favorite in all of Northern Europe! The ideal option is the German version, but Latvia has created its own. And these are two different “beasts”: the German version is more like a popover bun with apples, and the Latvian version is a real pancake, albeit not transparently thin, but it is a pancake, tender, airy, surprisingly delicious! And although pancakes are baked on cream, hard sweet and sour apples make them almost weightless. Apple pancakes, generously sprinkled with cinnamon, powdered sugar, poured with honey, flavored with fresh sour cream, can easily make the consumer lose his temper and eat too much. It’s amazing!

  1. Divide the eggs into yolks and whites. In a suitable container, pour cream, milk and put a piece of butter. Place in the oven for 30-40 seconds so that the butter melts.
  2. Pour the liquid with oil into a saucepan or bowl, pour in the sugar and add the yolks, mix thoroughly with a whisk or mixer.
  3. Whisk the whites with salt until a white foam forms.
  4. Pour flour with baking powder into the milk mixture and mix until smooth.
  5. Add the grated apple. It is convenient to rub the apple directly into the bowl. Mix it.
  6. You need to add the beaten egg whites to the dough.
  7. Preheated mold (diameter 18-20 cm) lubricate with vegetable oil, pour 50-60 ml of dough (3-4 tbsp. l.), tilting the mold from side to side, spread the dough over the entire surface of the bottom and bake over medium heat until bubbles appear on the surface.
  8. Gently turn the pancakes over with a spatula, bake for another 30 seconds and transfer from the pan to a plate.
  9. Sprinkle the pancake with a mixture of ground cinnamon and powdered sugar Bake the remaining pancakes. I got 7 pieces.
