Gratin in French means “crispy crust”, which is formed when the cheese melts. I want to offer a variant of this dish made from seasonal vegetables – potatoes and pumpkins. The dish turns out to be satisfying, despite the absence of meat products, as well as very tender and fragrant.
Peel the pumpkin and remove the seeds. Cut the pumpkin into cubes.
Take a small potato to make circles. Peel the potatoes, rinse with water, cut into not too thick circles. When the potatoes are already sliced, you do not need to rinse them with water, so as not to remove the starch.
Pour milk into a saucepan and add cream. Add potatoes and pumpkin to the warm milk.
Add nutmeg, salt and allspice. Boil the vegetables in milk until tender.
Remove the pan from the heat and add finely chopped parsley.
Grate the cheese on a coarse grater and add it to the pan. To interfere.
Transfer the mass into a mold and sprinkle with grated cheese.
Put the mold in a preheated oven and bake until golden brown.
Gratin is served hot.
