Gratin translated from French means "crispy crust", which is formed by melting the cheese. I want to offer a version of this dish, made from seasonal vegetables - potatoes and pumpkins. The dish turns out to be hearty, despite the lack of meat products, as well as very tender and fragrant.
Pumpkin peel and remove the seeds. Cut the pumpkin into cubes.
Take a small potato to get circles. Peel potatoes, rinse with water, cut into not too thick circles. When the potatoes are already cut into slices, do not need to wash it with water, so as not to remove the starch.
In a saucepan pour the milk and add the cream. In warm milk add potatoes and pumpkin.
Add nutmeg, salt and allspice. Boil the vegetables in milk until tender.
Remove the pan from the heat and add the chopped parsley.
Cheese grate on a large grater and add to the pan. Stir.
Shift the mass into the form and sprinkle with grated cheese.
Form put in a warm oven and bake until Golden crisp.
Served gratin hot.
