  1. Peel, wash and dry the vegetables. Cabbage cut into large pieces, carrots cut into slices, pepper -petals. Garlic is also cut into slices and add 15 minutes before cooking, so that it activates the nutrients better.
  2. Put the vegetables in a spacious stainless steel dish, lightly salt and sprinkle with sugar. Add the hot pepper paste. You can replace the pasta with fresh hot pepper or dried chili, but the finished fermented pepper paste gives the salad a special taste and aroma. Mix the vegetables lightly with your hands, without kneading too much – Peking cabbage turns out very tender.
  3. Next, pour soy sauce over the cabbage – the classic TM “Kikkoman” is suitable and add vinegar, mix. To try it, perhaps you can add anything to your taste – salt, sugar, vinegar.
  4. Coarsely chop the coriander seeds and sprinkle over the cabbage, mixing with paprika. Heat the oil to a haze, cool a little and season the salad, pouring spices. Mix well, let it brew and put it in the refrigerator. At least – for an hour, maximum – I will not specify. We have enough for three or four days.
