  1. Clean the squid from the inside and films, cut into rings or straws. You do not need to boil them beforehand, cut them raw.
  2. In a frying pan, heat the oil and lightly brown the onion cut into half rings (until light Golden)
  3. Add the tomatoes mashed with a fork in their own juice to the onion. Simmer the tomatoes and onions for about 5 minutes, add salt and sugar. You can also use sliced fresh or frozen tomatoes. If desired, remove the skin from them, dropping them for 1 minute in boiling water.
  4. Add the sliced squid rings to the resulting tomato sauce and simmer all together until the squid is clear and whitish-pink. This usually takes 2-3 minutes. The longest is 5 minutes. The main thing is not to overdo it, so that the squid does not become rubber.
  5. At the end, season to taste with lemon pepper and Italian dry herbs.
  6. Add the chopped parsley (or green Basil). The perfect side dish is rice or pasta. It tastes best with spaghetti or fettuccine. But rice is also good. This dish cannot be reheated!!!
