Ingredients

Instructions
Wash the zucchini if the skin is rough, peel and grate on a coarse grater. Put in a colander and squeeze out excess moisture.
Wash, peel and grate the sweet potatoes.
Mix zucchini with sweet potatoes. Add the chopped onion and garlic.
Add salt, pepper, egg and flour. Flour can leave more or less, depending on the size and juiciness of the zucchini.
Add the finely chopped herbs and mix the whole mass thoroughly.
Spoon the mass into a preheated frying pan, giving it the appearance of pancakes. Fry on a low heat under the lid until Golden.
Gently turn over with a spatula and fry on the other side.
Delicious both hot and cold.
