Bread Dumplings Recipe
A traditional dish of both Austrian and Bavarian cuisine. The differences are only in shape: in Austria, small balls are made from dumplings, and in Bavaria – large balls, sometimes one for the whole plate! But regardless of the shape, bread dumplings turn out really tasty. They are just perfectly combined with thick meat goulash and those types of roast where there is a lot of delicious sauce. If you wish, you can change the filling of the dumplings by adding various herbs, spices, replacing onions with dried tomatoes or even cheese. Create and enjoy!

  1. Pieces of white bread put in a bowl and pour milk. Stir and leave for 15 minutes to swell. I advise you to cut the crust off the bread, but the weight of bread without crusts should be 350 g. I did not do this and had to knead the bread mass very carefully.
  2. Finely chop the onion
  3. Finely chop the parsley
  4. In butter, simmer the onion for 10 minutes on low heat
  5. Remove from heat, add parsley, stir
  6. Put the mixture on a plate so that it cools down quickly
  7. To the swollen bread, add onion with parsley, eggs, nutmeg and a little salt and pepper to taste.
  8. Knead the bread dough well first with a spoon and then with your hand. The mass should become very sticky and form into a ball. If the mass is not too thick and refuses to get off in a lump, add the breadcrumbs and knead again. But too many crumbs should not be added, dumplings will turn out tough.
  9. With wet hands, roll a ball the size of a ping pong ball out of the bread dough. To make the dumplings turn out for sure, I advise you to cook one ball for a sample in boiling salted water: if the mass does not fall apart in the water, then everything is fine.
  10. Then everything is simple: roll the balls with wet hands and boil them in portions in boiling salted water for 8 minutes after surfacing. Immediately put them on plates, pour melted butter over them if you are going to use them as an independent dish, or spread with the sauce obtained during the preparation of meat dishes.
