Fragrant pickled mozzarella with notes of rosemary and lemon combined with juicy cherry tomatoes and cheese is the perfect snack for white wine or champagne.
In a deep bowl, mix olive oil, lemon zest, rosemary (I had dried), salt and pepper. Put the mozzarella into the mixture and leave to marinate for 30-40 minutes.
Cut the bread into slices, give the desired shape. I made the stars with a cookie cutter. Brush each slice with cottage cheese.
Place the tomato, pickled mozzarella and basil leaf on top. Secure everything with a skewer. Serve with white wine or champagne.
