  1. Cut the vegetables into cubes. This can be done easily and quickly with the help of special knives in the combine.
  2. Put them in a baking dish. Season with salt and pepper, drizzle with olive oil and mix.
  3. Rub the chicken with salt and pepper inside and out.
  4. Melt the butter. Add finely grated hard cheese to the heated butter.
  5. Lubricate the chicken from the inside with a small amount of butter and cheese. Put inside a lemon, cut into 6-8 parts, 4-5 crushed garlic cloves (add the remaining one to the vegetables) and thyme sprigs.
  6. Gently separate the skin on the breast and shins. Pour the remaining cheese-butter mixture under the skin and “massage” to distribute the mixture. Tie the legs. Put the breast on the vegetable mixture.
  7. Bake for about 40 minutes in the center of the oven. Turn over and bake for another 20 minutes. Return the chicken to its original position. If it is not browned yet, sprinkle it with the released juice and oil and increase the heat. I have it perfectly browned in one starting position without somersaults.
  8. Before serving, let the chicken lie for 5-10 minutes under the foil. Serve with the vegetables on which it was baked. Enjoy your meal.
