Good day to everyone. Today I want to offer a recipe for a very tasty Christmas cake or as it is also called – an English cupcake. I’m already sharing the recipe, because it needs to be allowed to ripen for at least a couple of weeks, and preferably a month. But trust me, it’s worth it. There will be a lot of juicy, delicious, fragrant dried fruits and candied fruits and quite a bit of dough that will smell like a whole bouquet of spicy spices.   1. the mass of dried fruits and candied fruits is indicated already soaked in syrup. If dried fruits and candied fruits have been soaked in pure alcohol, the amount of sugar in the dough should be increased to 50 grams. A mixture of any spices as desired. I ground cinnamon, cardamom, star anise, cloves and nutmeg in a coffee grinder. Jam can be taken absolutely any. I had an apricot. All ingredients should be at room temperature.
  2. Add sugar to the softened butter and whisk until white.
  3. Then add the egg at room temperature and whisk until a soft, homogeneous, fluffy “cream” is obtained.
  4. Then spices, salt, jam and honey. Mix everything well or beat it with a mixer.
  5. Then sift all the flour and mix well.
  6. I add dried fruits, mix and this is the picture that should turn out. Even in its raw form, the taste is simply divine…
  7. The size of the mold in which I will bake is 11*20. Brush with butter and cover with parchment paper.
  8. I spread out the dough, level it so that there are no voids.
  9. Cover with foil so that the top does not burn, and the pie is well baked inside, and send it to the oven preheated to 140-150 degrees for 2-2. 5 hours.
  10. My cupcake was baked for 2 hours and 10 minutes. Baked under foil for 1 hour and 50 minutes. While the pie is hot, it can be smeared with any strong alcohol or syrup, but I had enough dried fruit. Or after it cools down, you can cover the cupcake with a protein glaze.
  11. Allow to cool completely and remove from the mold. The weight of the cake is 570 grams.
  12. We fall asleep well with powdered sugar and at this stage we can wrap it in plastic wrap or parchment paper and put it in the refrigerator for ripening.
  13. But I’ll open mine and show you what it’s like inside. In my opinion, the cut is simply magnificent. And soaked dried fruits give the dough a delicious taste and aroma. Do not be lazy and soak at least overnight. You ate one half right away), and the second one was wrapped in parchment and removed.
