  1. For lagman, it is better to take meat with fat, I try to buy a bagel or a brisket. Wash the meat, dry it, cut into pieces.
  2. Also prepare the vegetables, wash and dry. Peel the potatoes.
  3. Fry the meat in vegetable oil until it is browned. Over high heat, stirring occasionally. The amount of oil depends on the fat content of the meat. Pour 150 ml of boiling water, add salt and simmer the meat over low heat for 30-40 minutes until the liquid completely boils away. Send the chopped onion to the meat. Fry over medium heat for 4-5 minutes.
  4. Add carrot cubes and paprika. Fry for 3-5 minutes, stirring.
  5. Cut the potatoes into large cubes and put them in a cauldron, fry for 5 minutes.
  6. Cut eggplants into cubes, add to the cauldron, fry for 3 minutes. Grind dried eggplants, mushrooms and seeds in a mortar.
  7. Pepper cut into rings, put in a cauldron. Fry for 3 minutes.
  8. Cut tomatoes into rings, put on vegetables, add spices. Pour 1.5 liters of boiling water, cook for 10 minutes on low heat. Boil the noodles in parallel.
  9. Add herbs, crushed garlic, sugar. Bring to a boil, add salt to taste. Remove from the heat.
