Whole Grain Bagels with Unusual Filling Recipe
Dear cooks, today I cooked borscht and, as always, stewed beets and carrots with onions for dressing. But since it turned out to be too much, I decided to use this filling as a filling for pies. As always, the fantasy went even further, and the result was delicious bagels with beetroot-carrot-poppy filling, flavored with liqueur, or rather tincture of blackberries. Don’t pass it by!

  1. The filling is simple to the point of outrage. Fry the onion in sunflower oil, add the beets and carrots grated on a coarse grater. Simmer under the lid on low heat until soft. Add the tomato sauce, stir, open the lid and hold it on the fire for a little longer so that the excess liquid evaporates.
  2. Transfer the finished vegetables from the frying pan to a bowl, add poppy seeds, sugar to taste, I added frangelico for emphasis. Well, you can also navigate here, for example, for a sweet option, even raisins, I think, would be suitable.
  3. For the dough, you need to mix both types of flour, butter, heat up a little so that it is very soft.
  4. In warm milk, dissolve a spoonful of sugar, yeast and two tablespoons of flour. Put it in a warm place and wait for the formation of a foam cap.
  5. Add salt, remaining sugar, egg and butter to the flour.
  6. Then add the yeast, mix well.
  7. Knead the dough on the table, you may have to add a little flour, but only a little. Do not “hammer” the dough with extra flour, it should turn out soft and elastic.
  8. Put the dough in a bowl, cover with a towel and let it rise, it took me 40 minutes.
  9. Divide the dough into three parts. Roll out each part into a circle, divide the circle into triangles. Put the filling on the triangles with wide sides
  10. The edges of the wide side of the triangle slightly lengthen, shift towards the center and where they come into contact with the sides of the dough, press with your fingers.
  11. Then roll up the bagel.
  12. Place the bagels on a baking sheet covered with baking paper. Leave for 15 minutes for proofing. Beat the egg with a fork, brush with egg rolls. Sprinkle poppy seeds, sesame seeds or ground nuts on top.
  13. Bake the bagels in a preheated 180 degree oven for 20 minutes. These are the rainbow ones that turn out.
