  1. Sift the flour. Prepare a decoction. Mix 1 tablespoon of flour with dry yeast. Add 50 ml of warm milk and 1 tablespoon of sugar, mix with a whisk. Put the sourdough in a warm place until a foam cap forms (20-30 minutes).
  2. Prepare the dough. Heat 100 ml of milk and melt soft butter (50 g) in it. Add sugar 1-2 tablespoons, vanilla (1 pack), cottage cheese (90 g), 2 egg yolks and salt. Stir until the mixture becomes homogeneous.
  3. Add the flour mixture to the liquid mixture in small portions and knead the dough. The dough turns out smooth, plastic and does not stick to your hands. Form a bun from the dough, lubricate with sunflower oil (0.5 tbsp.l.) and put it in a bowl, cover with a film. Put the bowl in a warm place so that the dough rises 2.5 times.
  4. Prepare the curd cream. Mix condensed milk with cottage cheese, egg white and thick mashed jam. Put the bowl with the filling in the refrigerator.
  5. Knead the dough that has come up, cover with a towel and let it “rise” for 20-30 minutes.
  6. Pre-cover the baking dish (f = 26 cm) with paper and grease with oil. Divide the dough into 2 equal parts. From each part, pinch off small pieces of dough and form a small bun. Then roll it out into a thin round cake and put it in a mold greased with melted butter.
  7. Two large parts of the dough are rolled into a layer and lubricated with melted butter, and then spread and distribute the filling. The filling (cream) is a little watery, but when baked due to protein, it will not spread.
  8. Roll each layer of dough into a roll.
  9. Dip the knife in flour and cut the roll into small pieces.
  10. We put the remaining cream (filling) in the middle of the round cake and spread the “petals” of the roll in a circle.
  11. Form the middle of the pie from the scraps of dough. Cover the cake with a film and put the mold in a warm place so that the cake rises 2 times.
  12. Then put the pie in a preheated 190 ° C oven until golden brown, for 30 minutes. Then grease the pie with beaten egg yolk and bake in the oven.
