Pies made from the Perfect Lean Yeast Dough Recipe
This is our family recipe for a dough that has been around for many years. For me and my family, the recipe is really perfect, tested over the years. The dough does not require kneading, easy to prepare, ideal for fried pies, donuts and buns. Products made from this dough remain fresh and airy for a long time, although they do not remain – they fly apart at the time of cooking!

  1. Dough: Pour water, oil, salt and sugar into a saucepan. Bring to a boil and cook for 2-3 minutes. This is a prerequisite. Cool completely. Dilute the yeast in 50 ml of warm water. Add to the cooled oil liquid. Gradually adding flour and stirring with a spatula, knead the dough, which will stick to your hands. P.S. Pay attention to the flour. Its density is different in all regions, so add it gradually, taking into account the recommendations I gave above.
  2. Cover the dough and send it to a warm place for 1 hour, it should increase in volume by more than 2 times.
  3. Cabbage filling: Chop the cabbage and lightly fry it. Add finely chopped onion and pepper grated on a coarse grater. Add salt, pepper and simmer over low heat until tender. Cool.
  4. Apple filling: Grate the apples on a coarse grater, add the zest and sugar, simmer for 2-3 minutes. Add the pudding powder, mix quickly and simmer for a couple more minutes so that the apples “grab” and the resulting juice thickens. I took a special photo to show the bottom of the pot. Cool.
  5. We form pies with cabbage: We don’t use flour anymore. Lubricate the work surface and hands with vegetable oil. It’s beautiful when all the pies are the same size. If you cannot divide the dough by eye, then weigh one piece and divide the dough according to it, as per the standard. Roll out the dough into a flat cake with your hands. Place the filling in the center.
  6. First pinch in the center.
  7. Then on both sides and pull out the sides.
  8. Connect the sides well, pinch them together and press, slightly leveling.
  9. I like this molding method. The pies do not open when frying and have a beautiful rounded shape.
  10. Fry in well-heated oil for 2-3 minutes on both sides.
  11. Until golden brown.
  12. We form pies with apples: Roll out the dough into a flat cake with your hands. Place the filling in the center.
  13. Put it in a bag and twist the tail of the dough well. Flatten into a flat cake.
  14. Fry in well-heated oil. Put it on a paper towel. When it cools down, sprinkle with powdered sugar and optionally cinnamon.
  15. I got 15 pies with cabbage and the same amount with apples. I wanted to cook the rest with cherries. But since I was cooking lean beets with beans, at the request of my husband, I fried buns, which I sprinkled with dry garlic. Oh, that was amazing!
