Stuffed Chicken Drumsticks in Green Sauce Recipe
The New Year’s table is always rich in a variety of snacks. I prefer those that are easy to prepare and that can be prepared in advance. Try chicken drumsticks stuffed with nuts and cheese in a bright green pesto sauce. You can cook them in a day or even two, they will become even tastier, completely saturated with flavors and seasonings.

  1. Put the nuts in the bowl of a food processor, add slices of dried loaf and slices of parmesan.
  2. In pulse mode, crush the products into coarse crumbs with a few taps. Set aside.
  3. Put the coarsely chopped washed and dried greens, apple slices and green onions into the bowl of the combine. Add a little salt and a pinch of sugar. In pulse mode, chop the greens until a homogeneous mass is obtained.
  4. Open the lid of the combine and use a spatula to collect the sauce from the edges of the bowl. Pour in the lemon juice. turn on the food processor at first speed and pour in the olive oil in a thin stream so that the sauce becomes homogeneous.
  5. Rinse the chicken drumsticks with cold water and dry thoroughly. Using a small thin knife, cut the flesh and tendons around the bone. Cut the peeled bone towards the end. Lightly season the prepared shins with salt and pepper.
  6. Stuff each drumstick with a tablespoon of filling and put them in a greased baking dish. It is more convenient to do this in a staggered order, so the lower legs will be positioned more evenly.
  7. Cover the shins with the sauce, evenly distributing it with a silicone spatula.
  8. Bake the shins in a preheated 200 degree oven for 15 minutes. Then reduce the heat to 160 and bake for another 20-25 minutes. Check readiness by puncturing the shin with a thin knife – transparent juice is a sign of readiness. Cover the shins with foil and let cool. Store in the refrigerator until serving. The shins can be served as a hot dish, but they are much tastier when cold and soaked in fragrant green sauce!
  9. When serving, place the shins on a platter and garnish with fresh herbs, citrus slices and bright strips of sweet pepper. Enjoy your meal.
