Crunchy Pickled Vegetables “Turchia” Recipe
Turchia is a popular dish in Bulgaria, literally means pickled cucumbers, although the vegetables are pickled. No holiday or feast is complete without this delicious, crunchy snack. You can take absolutely any vegetables, but most often it is cooked with cauliflower, carrots, bell peppers, green tomatoes. It is prepared as a quick option when it can be eaten the next day, and as a preparation for the winter. Having tried it once, you will always cook this yummy!

  1. Pour water into a saucepan, add salt, sugar, sunflower oil and vinegar. Bring to a boil, let it boil for 3-5 minutes and leave to cool. The marinade should be warm, but not hot.
  2. Choose a combination of vegetables to your taste, but put more cauliflower and carrots, they turn out especially tasty. Divide the cabbage into inflorescences, the vegetables into small pieces.
  3. Put black, allspice, bay leaf in a clean jar at the bottom. Apply vegetables arbitrarily, alternating them, greens. If you are preparing Turkey for the winter, sterilize the jars.
  4. When the marinade cools down, pour the marinade vegetables under the very top and close the lid. The vegetables should stand for about four hours, then put them in the refrigerator overnight, they will be ready the next morning. They are stored for about 3 weeks. If you are doing it for the winter, then add 2-3 aspirin tablets to each jar and close it. Instead of aspirin, you can sterilize the jars for 20 minutes, but then the vegetables will not be so crispy. Enjoy your meal!
