  1. First we’ll make pancakes. I have a simple classic recipe for pancakes on soda. This recipe always makes pancakes for me. The taste is neutral, soft and elastic and can be stuffed with any filling. Whisk the eggs with the milk and water, add salt and sugar. Add flour and stir with a whisk. Let stand for 15-20 minutes.
  2. At the end of the dough, add baking soda, slaked vinegar (or lemon juice) and vegetable oil. Mix everything and fry the pancakes.
  3. Before cooking pancakes, add a little vegetable oil to the pan. Then the pan does not need to be greased. Fry the pancakes on both sides until Golden brown.
  4. Prepare a delicious filling for pancakes. Lightly salted fat herring cut into fillets and cut into cubes (remove the bones). Cut green onions, avocado and sweet Crimean onions and drizzle with lemon juice. If the onion is bitter, it is better to do only green. Add 1-2 teaspoons of mayonnaise and pepper to taste. You don’t need a lot of mayonnaise! Just to combine all the components of the filling.
  5. Stuff each pancake with the prepared filling. You can wrap it in an envelope, a tube, or a triangle. As your heart desires!
