Apple Pie with Cranberries on Rye Flour Recipe

  1. Fry the hazelnuts in a frying pan, add the same amount of sugar. When the sugar turns into caramel, put the contents of the mold on paper. When it cools down, chop everything into crumbs.
  2. For the dough, mix rye and wholegrain flour (sift both types). Add instant flakes, salt, a spoonful of sugar, soda. Mix olive oil and boiling water separately. Pour in the flour mixture, add half an egg and a tablespoon of nut-sugar crumbs. If necessary, add a little more flour. Cover with a towel and let cool.
  3. Wash the apples, remove the core. Ideally, take apples of different varieties. Cut into small pieces.
  4. Pour brandy into a saucepan, pour out the apples. Add spices, honey, butter, a spoonful of flour. Simmer for a few minutes on low heat. The liquid should evaporate slightly, and the apple mixture should thicken. Add cranberries (can be frozen) and nut crumbs. Adjust the sweetness to taste, you can add more honey.
  5. Grease the mold (24-26 cm) well with oil. Divide the dough into 2 parts – 2/3 and 1/3. Roll out most of the dough, put it in a mold, form sides. Distribute the apple filling.
  6. From the remaining dough, make any figures – flowers, ornament or lattice. Decorate the cake. Lubricate the surface with the remaining egg.
  7. Bake in a preheated oven at 180 degrees until cooked (35-45 minutes, depending on the oven). When serving, the pie can be sprinkled with powdered sugar.
