I want to introduce you to Bulgarian cheese soup, or, as it is also called, “Purple soup”. The taste of this soup is sour and salty. Very tasty and nutritious, although cooked without meat.
Finely chop the onion and carrot.
Fry in oil with the addition of pepper.
Peel and slice the potatoes, and rinse the rice.
Boil the water and add the potatoes and rice.
Cook for 10 minutes, then add the onion and carrot, cook until tender.
Separate the yolks from the whites and mix them with yogurt or thick sour cream.
Finely chop the cheese and add to the soup.
Then, with constant stirring, add the yogurt.
Add salt, parsley and savory.
After boiling, cook for 5 minutes and let the soup brew.
