Lean Brownies with Red Beans Recipe
I just love these cakes! I want to replenish the piggy bank of a lean recipe with my favorite dessert. There is no flour in it, and red bean puree is used as the basis for the dough. The recipe is suitable not only for a lean table, but also for vegetarians, because the role of eggs in it is performed by a completely unexpected product for me.

  1. Soak the beans for 6-8 hours, periodically changing the water. Then boil until tender (about 1.5-2 hours).
  2. I recently discovered an unusual egg substitute in baking. These are ordinary flax seeds. After grinding and soaking, they bind the dough ingredients no worse than chicken eggs.
  3. Seeds are sold at the pharmacy – whole and crushed. Grind the whole in a coffee grinder.
  4. 1 tablespoon of ground flax seeds + 3 tablespoons of water replace 1 egg. Add room temperature water to the flax and leave to swell for 5-10 minutes, then lightly whisk the resulting gruel with a fork.
  5. Chop the finished beans in a blender. Gradually introduce the remaining ingredients. If the dough turns out to be very thick, you can add a little water.
  6. Fry the nuts in a dry frying pan and chop coarsely. Fill the cupcake molds with dough, sprinkle with chopped nuts. Bake at 180 *C for about 25 minutes. Cool on the grill and remove from the molds.
