  1. Heat the milk to 38C, add sugar and dry yeast, mix, leave until foam caps form.
  2. In a bowl, sift flour with salt and turmeric, pour in the milk-yeast mixture and melted butter, knead the dough. It will be soft, not sticky to the hands, it is a pleasure to work with it. Cover the bowl with a towel, put it in a warm place to rise for an hour. The dough should increase by 2 times. I usually put it in the oven and turn on the light bulb. There are no drafts in the oven, and the heat from the electric bulb is enough to evenly lift the dough. If there is no light bulb, turn on the oven for 3-5 minutes so that the walls are slightly warmed up, turn off the fire, check with your palm whether the air inside is too hot, and only then put the dough to rise.
  3. While the dough is rising, prepare the filling. Boil the broccoli in boiling salted water for 4-5 minutes, put it in a colander, let the water drain, then divide into small inflorescences. Broccoli should be slightly crispy, don’t overcook it!
  4. Cut the boiled or baked chicken breast and ham into small cubes. I didn’t have enough ham, so I added some smoked sausage.
  5. Mix the chicken, ham and broccoli in a bowl. Separate the yolk from the protein. Leave the yolk to lubricate the surface of the cake, and the protein must be whipped with a spoonful of grainy mustard and grated cheese. Add the egg-cheese mixture to the rest of the filling, add a little salt, pepper and mix. The filling is ready.
  6. Meanwhile, the dough has risen. Dip your finger in the flour and make a depression on the surface of the dough. If it immediately starts to tighten, then the dough should still stand, if the hole almost does not change its shape within 5 minutes, then the dough has already come up. Sprinkle the table with flour and ebonite for the dough. Roll out the rectangle, put the filling in the center, make slanted slits, as in the photo, and braid the braid. Place the pie on a baking sheet and cover with a towel. Let it brew for 20 minutes. Preheat the oven to 180C. Mix the yolk with a spoonful of milk and grease the surface of the cake, sprinkle with sesame seeds. Bake for 30 minutes until golden brown.
