  1. In a bowl, mix 2 cups of flour, salt, sugar, vanilla, yeast. With this amount of sugar, the dough turns out to be moderately sweet. You can put sugar or more or less, depending on the baking you plan from it!
  2. Make a recess in the dry ingredients and pour in warm water.
  3. Knead the viscous dough with a spoon. Add vegetable oil and another half cup of flour. Knead the dough.
  4. Depending on the quality of the flour, you may need 1 tbsp. The main thing is that the dough turns out soft and does not stick to your hands! I need exactly 2.5 glasses for this. Knead the dough for 5-7 minutes, actively kneading on the table.
  5. Lubricate dishes suitable for a microwave oven with vegetable oil. The vessel should have a lid, which also needs to be lubricated with oil! Put the dough in a bowl. Cover with a lid.
  6. Put it in the microwave. Also put a glass of hot water in the microwave. It’s more convenient for me to do two injections. The power of the microwave ovens is set to a minimum! Turn it on for 3 minutes. The oven turned off. Let the dough rest for exactly 3 minutes. Turn on the microwave for 6 minutes at minimum (!) power. After turning off, leave the dough in the oven for 6 minutes. The dough will NOT rise in a minute, and the door will NOT OPEN! Only after the last 6 minutes, you can remove the dough and a glass of water.

  8. Next, we turn to the products. Divide the dough into 8 parts.
  9. Roll 7 pieces into a ball, give a flattened shape and place on a baking sheet at a distance from each other. Cover with polyethylene and leave for 15 minutes. Divide the remaining piece of dough into 7 parts and use for decoration. This dough is also covered with polyethylene or a towel.
  10. At this time, let’s prepare the filling. In a bowl, mix cottage cheese, jams, egg and semolina. If desired, jam can be replaced with sugar and dried fruits, and instead of semolina, starch or flour can be added. My jam is very tasty… Apple slices, raisins and almonds!
  11. In the center of each piece of dough, make a recess. Some do it with a glass, pressing on the bottom, but I prefer fingers.
  12. Fill the recesses with stuffing. Now we will create a decor for our cheesecakes, you can turn the oven on 180 degrees so that it warms up.
  13. Roll out one of the small pieces of dough that were left for decoration into a thin layer on a table sprinkled with flour.
  14. With a knife for cutting the dough, simply sprinkle the grate with flour and roll it out over the dough.
  15. Gently stretch the mesh.
  16. It is convenient to transfer the mesh to the product using a spatula.
  17. Thus, cover all 7 cheesecakes with a grid. Mix the yolk with 1 tablespoon of water and lubricate all the products well.
  18. We send it to the preheated oven. Bake at 170 degrees for 25-30 minutes until golden brown.
