  1. First you need to prepare the dough: add sugar, dry yeast to the warm milk, mix, then add flour and mix everything again. Set aside for 15-20 minutes until a fluffy foam forms. Then add sugar, eggs, mix, add sour cream-mix. Then add starch and semolina, they will allow the finished rolls to stay fresh for a long time (it’s good if they stay).
  2. The next step is to pour in odorless vegetable oil and in parts, add flour in three or four doses and mix. Before the last addition of flour, mix the softened butter into the dough and knead for 3-4 minutes with your hand so that it mixes well. Then pour the remaining flour on the table and continue to knead the dough, stirring the remaining flour. First 750 g, and then look at the stickiness of the dough. The dough turns out soft, but not sticky to the hands.
  3. Grease a bowl with oil, put the dough in it, cover with cling film and put in a warm place to rise. I preheat the oven to 40°C, turn it off and put the dough there. The finished dough is slightly picked up from the edges under the bottom, divided into 80-85g round shape. Cover with a towel so that it does not chafe.
  4. Prepare a baking sheet, cover with high-quality baking paper. Dip each ball in sugar and place on a baking sheet. With a whisk, press down on top to get a pattern on which snowflakes will be drawn. Let the dough stand for 10 minutes and put it in a preheated 180 ° C oven for 20-25 minutes. Keep an eye on the oven. Allow to cool completely.
  5. Prepare the glaze for the snowflake pattern. Whisk with a fork half of the protein, a few drops of lemon juice and sifted powdered sugar until they are completely mixed and the mass turns white. Put it in a pastry bag and apply the pattern. It freezes for 5-8 minutes.
