  1. In a bowl, mix all the dry ingredients: flour (2 cups), soda (1 tsp), salt (1/3 tsp).
  2. In a separate bowl, mix the egg (1 pc.), sour cream (3 tablespoons) and sugar (1 tbsp.l.).
  3. Beat the mixture until smooth.
  4. Add softened butter (70 gr.) to the flour mixture.
  5. Chop the butter and flour into crumbs.
  6. Add flour and soda to the butter-flour mixture.
  7. Knead the dough. The dough should be soft and plastic. Wrap the dough in plastic wrap and leave for 20-30 minutes.
  8. Then roll out the dough to a thickness of 3-5 mm. with a donut blank and a round cookie cutter, cut out the circles.
  9. Put 1 teaspoon (with a slide) of jam on each circle, smear along the contour of the open surface with a beaten egg (to better connect the upper ring). Cover the surface with a second ring of dough.
  10. At the edges of the cheese cakes, make pockets with a “string”.
  11. Place the cheesecakes on a baking sheet covered with parchment, then grease the cheesecakes with beaten egg and send them to the oven, preheated to t180-190C. Bake until golden brown.
  12. Sprinkle the finished chilled cheesecakes with powdered sugar.
