  1. To begin with, prepare spices: black pepper, sweet paprika, allspice, coriander and ground cumin (you can whole). If you use dry mustard, add it to this mixture. Mix all the spices well.
  2. Crush in a mortar. Let your husband grind, after a couple of minutes of hard work, add 1 tablespoon of oil and work a little more.
  3. Grate the tomato without the skin on a coarse grater and add minced meat to it.
  4. Add to the minced meat: loaf, parsley, ground spices, grated onion, mustard (if you do not use powdered) and salt to taste. Mix everything well. Do you smell that?
  5. Put the minced meat in a free container and, picking it up in handfuls, lifting them to a height of 30 cm from the container, toss it with force. So, we’re kind of whipping up the filling. What is he doing? Minced meat is well impregnated with air, and the ingredients are perfectly combined with each other. Meat tortillas are tender, juicy and airy, by the way, parsley gives them not only flavor, but also juiciness. Put the finished minced meat in the refrigerator for at least 2 hours, preferably overnight.
  6. Dry the mozzarella. Cheese “Babibel” without packaging. P.S. If there is no small mozzarella, replace it with large, sliced pieces. Babybel cheese can be replaced with any other soft cheese by cutting it into squares.
  7. Roll the mozzarella in pepper. Sharper lovers can roll half in a black pepper hammer.
  8. Cover the bottom of the 18x10x7 mold with baking paper, grease the sides with oil. Put the minced meat in it and make a deep recess in the middle. Alternately squeeze out the Babybel cheese and mozzarella along the entire length of the meatloaf.
  9. Close the recess and pour 1 tablespoon of ketchup on top. This will give both a taste and a beautiful crust. Bake in a preheated 190°C oven for about 45 minutes. I got a lot of juice in the process and I carefully drained it. Focus on your oven!
  10. Let cool well. Put it in the refrigerator for a few hours. P.S. hot bread is also sooo good!
