Minced meat for cutlets:

Instructions
  1. Finely chop the nuts and lightly fry them in a dry pan. Finely chop the onion.
  2. In a bowl, mix the minced meat, onion, salt, pepper, and marjoram.
  3. Add cognac, nuts, yogurt, and egg. Stir well. Cover the bowl with minced meat with plastic wrap and put it in the refrigerator for at least 2 hours.
  4. Preheat the grill pan. Form the cutlets and place them on the grill. Fry the cutlets on both sides until tender.
  5. In a separate bowl, mix all the ingredients for the sauce. Serve with any side dish, pouring sauce liberally.
